Brief
Hatozaki asked Wilde Toast to build a global on-trade serve toolkit, giving market teams a clear plan to get Hatozaki ordered in bars, and ordered again.
Japanese whisky is one of the most respected categories in the world, but in bars it is rarely chosen. Most brands compete on heritage and ceremony. Bar decisions happen fast, in rounds, and usually on a bartender’s recommendation. The challenge was to win at the moment of ordering, not on story alone.
Key objectives:
1.Define Hatozaki’s role in the on-trade as a whisky for discovery
2. Build a serve strategy that leads with highballs to drive trial and repeat rounds
3. Give bartenders the confidence and language to recommend Hatozaki on a busy shift
4. Create a toolkit any market can pick up and execute
Delivery
The organising idea was Emotional Craft: Japanese craft proven through flavour and balance, rather than age and lineage.
We started with the serves. There are five drinks, each named after a mood rather than its ingredients, so they’re quicker to recommend and easier to reorder. They follow the flow of a night, from Rising Dew, a bright matcha and yuzu highball for the first round, to Umami Glow, a honey and miso short serve built for the last. Highballs lead, because they’re the easiest first order in a busy bar.
Advocacy came next. The Hatozaki Craft Sessions are inspired by the Japanese idea of Takumi, mastery through precision and repetition. They’re hands-on sessions for head bartenders and bar managers, led by respected local bartenders and specialist collaborators. Each one builds the highballs, then goes deep on a single craft theme, from ice sculpting to yuzu pearls. The Pour Collective competition then rewards bartenders for what actually gets ordered and reordered, with a trip to Japan for the winner.
For guests, we created a ritual. Each serve arrives with a folded origami card shaped like the lotus on the bottle, which unfolds to reveal a short line matched to the drink. Branded ice stamps and bamboo coasters carry the brand into the hand and onto the table. A mood-led Instagram journey points drinkers to the nearest bar serving their drink.
The toolkit closes with an activation checklist, so every market knows exactly what to put in place, from securing priority venues to tracking the competition.
